We are looking at about 100 users connected at our office. There will also be about 30 or so sites w/email hosted for our agents. in total about 200 users or so.

Dovecot is supposed to be faster/more efficient, but both should be
adequate until you get A Whole Lot of users. And then you use Cyrus.
