You find the information on debian's website. All software debian is delivered
is described there (about 33000 packages).

The mediums (DVD/CD) are sorted at popularity, so DVD1 contents the most
popular software, and the higher numbers the less popular software.

If you do not want to download the DVD, give the netinst a try and install
then all software at your needs.

For testing purposes you also can use debien-livefile, apt2sid or knoppix as
well.
