I converted our archived Outlook emails into standard mbox format files
(multi-part MIME format) using:

http://www.matijs.net/software/msgconv/

Then you can read the email using Thunderbird, or similar programs.

An alternative, if you still have outlook available, is to set up
IMAP on a Linux server, add the account in outlook and drag the
messages over. Then you can access them from any client that
supports IMAP.
