It's called the PPD. All print clients should be fetching the PPD from
CUPS and using the DefaultPageSize from that (and they are here).
So perhaps you need to check what page size is configured for the queue.
Well, to be blunt. It's not working. I've tried configuring things via
the CUPS webserver, and separately by the Gnome print configuration
tool. Neither set a default for everything else. So that's yet another
software, not user, fault. (I've tried all that I ought to.)
I don't feel like trying to tracking the cause at the moment, I might
have a bash at it later.
