Change the Open with application

Hi All,

Can some one tell me where I can find the option or config to change
my avi's from opening in mplayer and vlc instead.
I have trawled the net and can not seem to find anything?
I can choose open with for a one off but I want it set permanently
I am using gnome / nautilas if it helps.

Thanks

Paul
