Can some one tell me where I can find the option or config to change

I have trawled the net and can not seem to find anything?
I can choose open with for a one off but I want it set permanently
I am using gnome / nautilas if it helps.

I find this works, most of the time:

Right-click on one of the types of files you want to set options for,
and open up the properties. On the properties box you'll find a way to
set the open-with choices, including the default.
