I don't care about format just need to translate with fair
accuracy from the French.

Is there a conversion app.?.

If all else (copy&paste, pdftotext, ps2ascii) fails, you can use
http://any2djvu.djvu.org/ to have it converted to djvu with OCR, and
then extract the text with djvutxt from the resulting djvu file.
