My main menu doesn't have anything named "Applications". It does have an entry named "Desktop" and under it "Preferences" but nowhere in there a menu named "Advanced".

I'm using the plain vanilla version of Gnome that comes with Redhat Fedora Core 4.

Two things are contributing to your confusion.

First, the version of the User Guide you're reading does not match
up to the version of Gnome you're running. That dialog was nuked
at some point. To add more confusion, I think the documentation
wasn't updated immediately to reflect that change.

As for the missing 'Applications' menu, this is because the "plain
vanilla" Gnome that ships with Fedora does not use the same plain
vanilla configuration as upstream Gnome. Our documentation team
can really only manage to produce documentation for the software
that we produce. If the distros want to customize our software,
then they really ought to customize our documentation as well.

If you want to change what program to use to open a file type,
find a file of that type in the file manager, right-click on
the file and select 'Properties'. The 'Open With' tab will
allow you to change the default application.
