I would guess you only need to disable it in gnome-terminal?
* Start the preferences for "Menus & Toolbars", make sure "Editable menu
accelerators" is enabled.
* Start gnome-terminal, navigate to "Help" and "Contents" (make sure the
menubar is enabled) and press backspace to clear the accelerator.
