How do I change my default web browser (or any other default application)?

I recently installed SeaMonkey as my web browser on my CentOS 4.4 Linx
system at work and at home. At work, the installation attached SeaMonkey to
my applications menu (and it did not at home - ?!?), but the default browser
is still Firefox, which I do not like.
How do I change my default browser to SeaMonkey? For that matter, how can I
change my defaults for any other standard application?
