Well, one often has a designated key to change volume. You can change the
shortcut in the keyboard settings. I think the steps are finer using the
direct shortcut.

cursor keys, but only in huge steps, while I can change it
"fine-grained" using the mouse. Combining the cursor keys with
shift, alt, control did not change the behaviour. Any ideas?

File a bug, maybe missing functionality.
