I don't think you can. I think Kontact depends on KOrganizer.

But that's package dependencies, right? I can right click on the
KOrganizer icon in the task bar and close it, but it'll still load
next time I run Kontact. That tells me Kontact may need
KOrganizer, but does not need the daemon running.

I presume you might mean the KOrganizer Reminder Daemon? If so,
right-click on the tray icon and you will see the option to start at
boot. Just de-select it.

It is. I selected it and re-selected it. Still starts whenever I run
Kontact.
