I don't think you can. I think Kontact depends on KOrganizer.

But that's package dependencies, right? I can right click on the
KOrganizer icon in the task bar and close it, but it'll still
load next time I run Kontact. That tells me Kontact may need
KOrganizer, but does not need the daemon running.

I presume you might mean the KOrganizer Reminder Daemon? If so,
right-click on the tray icon and you will see the option to start
at boot. Just de-select it.

I think this is not the case. This option, when active, starts the daemon when
you log in KDE, even if you don't open Kontact. This way, KOrganizer is still
able to fire up the configured alarms when Kontact is not running.
However, the daemon is allways ran when you open Kontact, no matter if this
option is selected or not. AFAIK, there's no way to prevent this.
