Boot to the first CD/DVD and install SUSE Linux to the Ubuntu
partitions. The default boot manager for SUSE linux is grub and has
been for some time. SUSE Linux should figure out your partition scheme
and use it. You'll be able to verify during install exactly what
partitions SUSE Linux sees and wants to use. You will be able to
modify that to whatever you want during the install. You may want to
format the Linux partitions before install too. Formatting is an
option during install so be careful which partitions you choose to
format!

I was able to replace Ubuntu 5.10 with SuSE 10. The installer formatted
the old Ubuntu partitions and install SuSE 10 on them. My Windows
XP(NTFS) partitions were not changed. After the install, I was able to
boot to either SuSE or Windows XP.
BTW, If the data on the PC is important, it is a good idea to have a
recent backup of the system before running the installer.
