I'm trying to find an option to set the quality/bitrate foe Ogg encoding in
KAudiocreator, but I can't find anything, can somebody advise please ?

Settings->Configure KAudioCreator->Encoder->OggEnc->Configure

Then you can select the command line options you'd like to use. man 1 oggenc
will provide you with available options, including bitrate.
