I'm trying to find an option to set the quality/bitrate foe Ogg encoding
in KAudiocreator, but I can't find anything, can somebody advise please ?

Settings->Configure KAudioCreator->Encoder->OggEnc->Configure

Then you can select the command line options you'd like to use. man 1
oggenc will provide you with available options, including bitrate.

This is what's there at the moment.

oggenc -o %o --artist %{artist} --album %{albumtitle} --title %{title} --date %{year} --tracknum %{number} --genre %{genre} %f

I know i need to add -q and a value say -q6, but I'm not sure where in the
line to add it.
