Just for clarity and the archives, adding the option forceblock=1 via creating a file under /etc/modprobe.d (which I called webcam) with the contents:

options ov51x-jpeg forceblock=1

allows this webcam to work with Skype (at least the Test button in Options, Video Devices, haven't actually made a call with it yet). Thanks again Wolfgang!
