in order to have a full backup of my Evolution (while, hopefully, leaving
behind whatever has become poisoned)?

If you do not get an answer here, look over at the Ubuntu list, this
was discussed, and the specific directories were mentioned. IIRC
someone was doing a small app for this purpose.
