Converting tar.bz to rpm is not trivial and in your case not necessary.

There is repository:
http://download.opensuse.org/repositories/mozilla/openSUSE_11.1/

You can add the same repository trough YaST Software Repositories.
Click Add then next screen check Community Repositories, then press Next, then
on next screen check openSUSE Build Service - Mozilla, then press OK.

Now you can go back to Software Management, find Thunderbird and update it.
Current version is MozillaThunderbird-3.0.4.

Advantage of adding above repository is that you will have updates when they
are published.
