is it possible to use the manual partition table on teh ubuntu

Do you just want to take, e.g., partitions 2 & 3, turn them into a single
partition 2 and install a new filesystem on it?

Then, yes.

If you mean you want to combine two partitions into a single one with all
the data from both partitions, not easily! The simplest way is to back up
both filesystems, delete both partitions, create the new partition, put a
new filesystem on it and copy back the backups. The harder way is to
backup both partitions, delete partition 3, grow partition 2 to fill the
space (I know this can be done, I don't know if the partitioner on the
Ubuntu installer is capable), grow the _filesystem_ to fill the partition,
and then copy the files from partition 3 onto it - most of which you can't
do from inside the installer.
