Good distro for console based server?

Hey all!
Is there a decent Linux distro out there that...
- Works well without X and through SSH?
- Works as a private SMB share to share files to a Windows network
- Works well as a Web and Mail server, offering PHP, ASP, CGI etc.
- Works well recieving and sending faxes
- Works well logging caller ID information and taking voicemail
...and some nice to have features...
- Can capture video from a TV card (similar to programming a VCR to tape TV)
- Working with an IR transmitter/reciever to learn from remotes and control
other devices (radio, cable box, TV)
This machine will be behind a hardware router, so firewall isn't a large
issue, but would be nice for port translation capabilities.
(Hrm... this message started out as a simple question... better quit before
it gets too long.)
Basically want to replace my Windows IIS server with a Linux box and
administer it through a terminal connection... and I'm a Linux newbie.
