[Beginner]: Linux administration

Hi folks,

I've just been using linux, and have been tinkering a little bit with it.
There are much to learn still, but it's fun. Occasionally though I find that
there are things that I shouldn't (or just plain don't understand) really
touch before asking experienced Linux users. For example, in the case of
kernel installation or uninstallation.

I currently use Fedora Core 1 Linux, and performed updates initially using
both yum and rhn-applet (just playing around to see what the difference is,
but that's another topic). Whenever I install kernel updates it adds to,
instead of removes the old versions; the old versions/builds are still
there. After having installed several kernel updates I see now the following
labelled kernels on the list:

Fedora Core 2.4.22-1.2174.nptlBOOT
Fedora Core 2.4.22-1.2140.nptl
Fedora Core 2.4.22-1.2140.nptlBOOT
Fedora Core 2.4.22-1.2174.nptl
Fedora Core 1 2.4.22-1.2115.nptl

In such order.

1. Now I don't know which kernel version I should use. I could take a guess
based on the numbering convention, but it wouldn't be much of an educated
one since I don't even know what the build convention means :-| so it would
be a guess based on a guess. Could you please help here?
2. After finding out answer to Q1., then my next question is: can I
uninstall all the other versions that I don't need and just keep the latest?
And how?
3. Where can I find instructions / reading materials, etc. re:
uninstallation in general (with or without installer tool like rpm).
