All the way down tree

Lets say I wanted to change the ownership of all the files, and directories
in

/var/www/html

But I want to make sure all the directories inside the html folder and on
(i.e. /html/images - /html/images/picture.jpg - /html/misc, etc) are also
changed to the new owner, what would the proper chown syntax be?

Similarly...

If I wanted to change the permissions on a directory, and all the files and
folders inside that directory all the way down... what would the proper
syntax be?

I'm assuming in both answers there is some type of wildcard to use but I'm
not sure how to get it going.
