For applications that are not in a menu, locate the application, startup script, or link. ON the Gnome Desktop, right-click, select create launcher. Fill in the name (title), a description if you want, and the command. In the case of Thunderbird, the command is /usr/bin/thunderbird. You may want to also specify command line parameters.
