I have a linux server running CentOS 4.2 and hosting a number of websites.
It has a Maxtor 300Gbyte PATA IDE drive perhaps about a third full. I would
like to safely make an exact copy of this drive and boot it up on another
motherboard with a faster CPU and more RAM. I don't want to hurt the old
drive in anyway in case I need to fall back to it.

Can anyone tell me how to do that? Also, will it boot up and run ok if
moved from one type of motherboard to another?

Best solution, use your backups and install into another system with
your MB. Now you will know the backups work and can test until you
know it is ok to attempt a production install.
Hook your system into the production network and use rsync to bring
the drive contents into sync with the production server.
