I am looking for a distro that will take most advantage from my Xeon
machine. I guess that means it uses SCSI and can take advantage of two
processors. Any distros to do this?
Tks.

Yes - virtually any of them.
All the LINUX distro's that I tried at least worked.
XP wouldn't work without a propriety driver. Wouldn't install. No generic
driver.
It should not be an issue with Linux. Unix/Linux cut their teeth on SCSI.
The only requirement for the dual processors is an SMP (Symmetric Multi
Processor) kernel - one is included with all the major distros I'm aware
of.
