Don't recall how in Gnome, but in Gnome2 you open the folder containing
a file of the type you want to assign, right click the file, click on
"Properties," click the "Open With" tab, and click the radio button for
the program that you want to open the file. Your choice will control
all files of that type.

And if the program is not listed under the "Open With" tab, click the
"Add" button in the "Properties" window. The "Add" button will allow
you to specify a path or browse through any directories you have access
to in order to find the desired program.
