What's not spam (or, more correctly, what SpamCop's system doesn't THINK
is spam) all lands in my Inbox. It can all also be in the Personal
subfolder in the IMAP account.
The problem seems to be that Sylpheed wants to use the E-mail address I
used when I set up the IMAP account, and I suspect it's specific to IMAP
accounts, because when I composed a reply a short while ago from a local
folder, Sylpheed picked the correct From: address even though that isn't
the default From: address (or, to use Sylpheed's terminology, "account")
for that folder -- I just checked the Properties for that folder.

Sylpheed normally fetches and filters mail that comes in to the IMAP
account, i.e. filters it into local folders. But most of the filtered
mail is mail I don't want to reply to anyway; the exceptions would be
the occasional mailing list E-mail where I'm actually participating in
the discussion.
Most of the mail I want to reply to (1) doesn't get filtered, so it at
least initially stays in the IMAP folders -- that is, until I move it
manually; and (2) can come from any of several E-mail addresses, and I
don't want to care about which one it comes from. I also don't want to
have to manage an IMAP folder (or, for that matter, a local folder) for
every E-mail address I might get "repliable" mail from. I normally dump
non-mailing-list stuff that needs a reply into my local Inbox and handle
it when I get time. Sometimes, though, I reply immediately to something
without even moving it out of the IMAP folder, and based on what I wrote
above, that seems to be what caused the problem last night.
Moving everything into the local Inbox before trying to reply to it may
be a workaround. I'll experiment more. But I still think I should at
least be able to configure Sylpheed to work the way I've described that
I want it to work -- acknowledging that not everyone would like that
behavior! :-)
