Was having an entirely different problem but I think the solution is the same in
both cases. In /boot/grub/menu.lst change "vga=0x??? to vga=normal). That
parameter tells it what resolution to start up at. If you say normal - or even
just remove the parameter - it should start up using it's defaults.
