Update with .rpm

I want to update several software, php, apache etc... I have read, what I
should go for .rpm
When i download it, when can I be sure of that it will replace/update the
old version, istead of just install another one in a different dir. ?
I want about the sittings, ex. php.. Must I take a backup of php.ini or does
the rpm only update around my sittings ?
