They look great? They should contain thousands of files, not just
the ISO image burned to disc.

Usually, when one burns an image from an ISO file, one doesn't need
to change ANY of the settings. The software is already set up. You
making changes prior to the burn likely causes a problem.
You cannot simply write the iso file to a CD. You need to burn the
IMAGE file to the disc. The result is a disc that has several
thousand files on it. To do this, you do not select "data disc" and
then choose the iso file. You make the selection that allows you to
burn an image to disc. ISO files are encapsulated disc images.
You could boot Knoppix and burn it, but you would have to have a
knoppix disc to do so.
There are plenty of freeware disc burning utilities.
