There is no reason why you should not, although it is not something I
would choose to do.

My main tip would be to go ahead and do it, YaST works.
Once you have installed and tried gnome, you might decide that you want
to try out some of the window managers (IceWM, fvwm etc.) - the
approach would be the same: Install via YaST then see if you like it.
Once you have decided which ones you *do* like, use YaST to remove those
you no longer want.
