I can put a sample up if you like (using something like a home
movie from VHS tape... nothing copyrighted of course!).
I'll just plug the sucker into my laptop.. carry it over to
my VCR and record. It's really as simple as:
cat /dev/video >my-movie.mpg
Drivers are built into openSUSE 10.2 ... anything of that
generation or newer should have the drivers. Prior to that
I put them into openSUSE 10.1 manually without major
issues.

Lag isn't bad.. of course, normally you'd never know about
it. What exactly are you trying do again?
I could offer a demo of the lag as well by doing something
interactive on the video source (e.g. change channels... or
better for me, operate the controls of my PMP using it
as the video source).
I'm assuming you mean the lag created by the grabbing
and encoding process.
You can certainly operate a highly interactive device as
the source. BUT... the lag will be noticeable (it might
be sub-second... but long enough).
