Forgot to mention the second 'strange' behaviour Yast is exhibiting. The
progress bars no longer start at the left and grow to the right but rather
they now start in the middle and grow outward ! This seems to be a bug as
I can not fathom how this could be a good thing. Is this the new way in
11.1 or is this a bug ??

Not sure about the second thing you are reporting, but I have also
noticed the first effect, 32-bit and 64-bit.
It probably is a bug but does not worry me because that process runs
pretty quickly nowadays. One thing you could try is:
- search for 'foo', click the appropriate fields to select foo
- search for 'bar', and select that as well.
- Once you have all the stuff you want, then install it.
Slightly inelegant but that gets you 'foo' and 'bar'. Another
alternative would be to try and skip the auto-refresh of the
Repositories on 'subsequent' installs.
