E-Mail?

Hi, I've been wondering about how e-mail really works for a while now. I
have a domainname for my server (cambrant.com), and before I have always
been able to e-mail any user on the system by sending an e-mail to
username@cambrant.com. It has always worked fine without problems, so I
begun thinking which server controlled all this, or of it's a native
*nix-function.
I know the SMTP-server (sendmail, exim etc.) takes care of _sending_ the
e-mail, but which program is used to recieve the e-mail and display it to
mutt/mail/whatever?
Also, on my latest server-configuration, which is debian linux, e-mailing
the computer suddenly didn't work. I installed Sendmail, thinking that it
would handle the situation, but it didn't. I can now send mail perfectly
fine, but i still can't recieve.
I would be really greatful if you could help me clarify what does what, as
well as help me find a solution to my current problem.
