You shouldn't need appletalk installed for an OS X Mac to connect to an IP
samba server.

OS X will work perfectly well without appletalk.

Appletalk is a noisy protocol like netbui, you should never bind more
protocols for machines than you really need to, to any interface.

Even on previous versions of Mac OS you could set up IP printing, it just
wasn't the default.

You could try checking all your security settings on the Mac for using
samba, alternatively you could try using IPP/ port 9100 and configure the
Linux box to advertise the printer accordingly.
