How do I configure my email sender address ?

I am using mutt to compose an email message. I edit the from address in Mutt,
using esc followed by f, then edit the email address.
Mutt is running on a machine (bongo) on my LAN. The package SSMTP forwards the
mail to my mail server (drum), which uses exim to forward the mail to my
ISPs SMTP server.
The sender address on the outgoing mail appears as dog@bongo.markyshark.org
even though I edited the sender address in Mutt to read soapy@joesisp.com
How can I fix this ?
Is the problem with mutt, ssmtp or exim ?
