I'm in the Mplayer camp and except for some "wmv formats" I think Mplayer
is superior to Media Player in actual playback (dvd, mk4, mpg, ogg, mp3)
and recording/encoding but not gui. Mplayer can play from the Linux
command line, ie, no X gui. Don't remember the Unbuntu flavors but you'll
need the Mplayer gui, fonts and all-codecs packages.

Kaffeine is my second favorite with a really nice gui interface but
I haven't used it's stream recording or encoding features.

For mp3 playback, I finally got Rhythmbox to work as it has a good
playlist feature, Xmms and Beep my second choices.

Been running Xmms and Mplayer for years on RH/FC on the SuSE box been
running Kaffeine, Rhythmbox and Beep.
