Well... the advantage of the geforce "brand" is that most of them are compatible: the basic interface hasn't changed (although the underlying technology has, in some cases a *lot*.)
Since you'll have to use nVidia's binary driver to get the most out of it anyway, that will usually have support for the latest chipsets.
I have 5 or 6 nVidia based cards plus a mainboard that has
on-board video -- all of them have the GeForce GPU. I would not know
where to begin to look for a nVidia card that is not GeForce or Quadro.
I'd forget about that if I were you - anything pre-geforce will be too slow to enjoy Ubuntu to the full :)
I have an FX5200 and a 6600GTX, both work fine.
Note that there is no such thing as "the" geforce GPU - it is a family of chipsets that shares a common interface, but there are dozens of models.
