Customizing Knoppix

Hi - I'm a noob, so I'm looking for some info on a knoppix customization.

I would like to make a special version of Knoppix with built in read write
support for NTFS and with the F-Prot free virus scanner already installed.
I would like to remove the GUI and automate the process of downloading virus
definitions and then scanning for windows virii.

For someone who has never done anything like this before, what would you say
would be the level of difficulty and time investment?
