1 ADC channel to measure "knob".
I would use pure digital signals whenever possible. there are incremental coders (with LED positions notifiers when appropriate) that do the "knob"
1 ADC channel to measure temperature over NTC
There are temperature sensor chips with I²C, "one-wire"and other serial digital interfaces
