If you buy "consumer" hardware from vendors like Dell and HP, what you
get is whatever components were the cheapest from whichever Chinese
vendor they were talking to last week.
With Dell, this sort of construction strategy seems to apply a fair
ways up the food chain even into what would be pretty clearly called
"server class hardware."

If you can identify all of the components (or better still, pick them)
from some set of decently known vendors (e.g. - for motherboards,
vendors such as Tyan, ASUS, and such), then you'll have an excellent
chance of a robust combination of equipment.
I'd be more likely to trust the "computer store built" one, as long as
it has decent component brand names in it, as compared to anything
from the Big Vendors that isn't "Very Pricey Server Hardware."

Do not worry about the bullet that has got your name on it. It will
hit you and it will kill you, no questions asked. The rounds to worry
about are the ones marked: TO WHOM IT MAY CONCERN.
