when I put a cdrom in there it comes up

What do you mean by normal? AFAIK CentOS isn't a LiveCD so by running
off the CD you should get into a rescue mode or installation mode.
Which is it?
Use CentOS CD and run rescue
In the rescue mode can you mount your HD partitions and are the
partitions as you'd expect?
Yes in rescue mode I can mount my HD
and chroot /mnt/sysimage and I see the file structure I would expect.
