If you like the 30 inch Apple display, it should work just fine with Linux given an appropriate display card. ATI and nVidia both make graphics cards with "Dual-Link" DVI outputs that will drive that monitor at its native resolution. (Note there's a difference between having two DVI outputs and having a "Dual-Link" output. The Apple display, along with similar 30 inch units from Dell and others, require the "Dual-Link" technology.)
The ATI FireGL 5000 series (and up) or the nVidia Quadro FX 1500 (and higher) cards support "Dual-Link" DVI, for example. I'm sure there are many other suitable cards, too.
