The method depends on whether you're using Gnome or KDE; but since you mention konqueror, I assume you're using KDE. From the K menu, open Control Center. In the left pane, expand KDE Components, then choose Component Chooser. There you can set your default browser and mail client, plus a couple of others. You don't say what distro you're running, but I think it'll be roughly the same, unless you're running a very old KDE version. I'm running Fedora 5.
If you're using Gnome, go to System, Preferences, More Preferences, and choose Preferred Applications.
