All of them.
Multiprocessor support is part of the kernel so every Linux distribution
has good support. The kernel has to be compiled with SMP support but I
don't know of any mainstream Linux distro that won't automatically install
an SMP kernel when it detects a dual core processor.
BTW wait a month before getting your system, the Core2 Duo is
coming out at the end of July.
It may be more of a problem with getting drivers for the chipsets
that support Core Duo. Or at least finding out which distros have
support (drivers) for them.
