On an AMD 'mobile' processor - AMN3000BIX5AP - is one I think.. it's
a socket 754 CPU.... will that fit in ANY socket 754 motherboard or
does the motherboard have to support a 'mobile' version of the CPU?
I know that the 'mobile' version is a lower power, cooler CPU designed
to fit in laptops... I see them for sale all the time and want to know
if I can pop one into a standard desktop motherboard and run with it.

Have you found a socket 754 motherboard? The current desktop socket is AM2
which is 940 pins, the previous desktop socket was 939. A socket 754
motherboard would be really old, also socket 754 only supported two DIMMs
at full speed and three at reduced speed. I don't see any reason why you
would want to build a socket 754 system today, the processor of choice
would be an Intel Core2 Duo or a socket AM2 Athlon X2. The Intel
processors are faster but AMD motherboards are cheaper and give you more
for the money.
I'm setting up a special NAS Server. It only serves up files over
nfs and cifs. It doesn't need to be powerful... I've currently
got a 4600+, 3800+, and 3.0ghz P4... all of these are overkill for
the NAS box. I'm actually hoping for fanless if I can swing that.
I'm looking for something cheap. I can get a CPU and motherboard
off of EBAY for $50.

For fanless solutions, I suggest you look at mini-itx boards with via c3
processors.
