I suppose in theory you could do software RAID over SAN volumes. But SAN volumes are almost always hardware RAID, so I don't really see the point.

I don't understand this question. What "controllers" are you referring to?
3. Can I mount the filesystem with say, writeback mode (or with noatime
setting)? Would /etc/fstab file work the same way?
You'll have /dev/sd?? devices, just like you would for SCSI (or SATA or USB) disks. What you do with them is up to you. You have to put the filesystem on them (ext3, XFS, any filesystem you like) and then can use whatever mount options are appropriate for that filesystem. There is no difference (AFAICT) between a locally attached SCSI disk and a SAN volume.
