Go look at eBay for an old Laserjet4 or 5. They were built to last and
there are plenty out there being offered quite cheap.

Yes. This is good advice. I use Laserjet 4 and Laserjet 5 here. I was
forever throwing out inkjet printers, so I jumped on Ebay and bought some
Laserjets, and they just run without hassle.

(HP Laserjets use PCL rather than postscript, but PCL is well documented
and is supported on GNU/Linux without any issues.)

Many HP Laserjet 4/5 have PostScript and/or network cards (I've got one)
and don't cost much more than a bare machine so are worth searching out.

Both my LJ4 and LJ5 have network and PostScript, the first one was by
accident because I got it from a Mac user but the second one I actively
looked for one with the PS module. During the lifetime of the first printer
it's been used with OS/2, Windows, various Mac flavours and Linux, so
having a nice simple PS driver helped a lot.

I've had a LaserJet 4MP in operation since 1994. (I think the "M" in
the name stands for Macintosh, i.e. PostScript.) Once nice thing
about having Level 2 PostScript built into the printer is that it
therefore has built-in FAX decoding. I use it to make full-page
images at 600dpi. I have a 600dpi scanner, too. It would take a long
time to transmit uncompressed images via parallel port.
