I had the same thing happen to me with my previous system: Periodically,
it would just "turn-off" like the plug was pulled. For years, it worked
fine. Just started doing it one day. What was the cause?

Maybe, a failing power supply? I checked the voltages and they were
right on, but I replaced it anyway. Checked and cleaned all the
connectors, connections, wires, everything. All good. Cleaned the CPU
heatsink and fan. And by "cleaned" I don't mean blowing out the dust, in
situ, I mean I removed it, took off the fan, cleaned (scrubbed would be a
better word; It was caked with crap.) it with detergent, first, then
alcohol and a toothbrush. Got it looking like new. Did the fan, too.
(However, it wasn't all that bad.) Removed and reinstalled the CPU to
make sure the connection was good. Checked for bent or broken pins.
Cleaned off the old thermal grease, put on new, and put everything back
together.

It ran just as before and periodically "turned off" just like before. A
few weeks later with shutdowns getting more frequent, I replaced the CPU,
and the problem went away. Bad CPU. Or gone bad CPU. Well, it was
old. Things don't last forever.

As to your last question: Don't turn off the thermistor; It's there to
protect your WHOLE system, but have it checked by a tech, and replaced,
if bad, if possible.
